Egg & Avocado Toast
Treat yourself to low-carb, high-protein Egg + Avocado Toast: lightly toasted whole wheat bread topped with smashed avocado, lemon juice, a sprinkle of cayenne and a lightly fried egg.

- 1 ripe avocado
- 1 tablespoon fresh lemon juice
- Pinch red chili flakes
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 4 pieces whole wheat bread, toasted
Slice avocado in half and scoop flesh into a medium bowl. Add lemon juice and lightly mash to desired consistency.
Add chili flakes, salt and pepper. Stir to combine, cover and set aside.
Heat oil in a medium skillet over medium heat. Crack eggs into the pan, one at a time, being careful to keep yolks intact. Season eggs with salt and pepper and lightly fry, 1 to 2 minutes per side, keeping yolk runny, if desired.
Meanwhile, place toast onto 4 serving plates and top each with mashed avocado, spreading evenly. Top each toast with a fried egg and serve immediately.
